Delicate Fish Soufflé

This delicate fish souffle whips pink salmon with zucchini, onion and rice flakes into a light, airy texture that's gentle for little mouths. Salmon brings protein and omega-3 fats while zucchini keeps it moist. A lovely way to serve fish from around 8 months — bake until just set and serve warm.

Ingredients

  • Pink salmon200 g
  • Zucchini100 g
  • Medium onion1/2 piece
  • Rice flakes30 g

Instructions

    Remove any bones from the fish and place it into a blender. Add the zucchini and onion. Blend until smooth.

    Stir the rice flakes into the prepared mixture.

    Distribute into silicone molds and place in the freezer until set.

    The soufflé can be steamed without removing from the molds or defrosting, or baked in the oven at 180°C for 30 minutes. ❄️ No need to defrost ⏰ Store in the freezer for up to 90 days.
