Nectarine, Rice flour, Corn flour, Egg, Baking powder, Butter

Fruit pancakes blend juicy nectarine into a batter of egg, rice flour and corn flour for a soft, naturally sweet and gluten-free breakfast. The fruit adds vitamins and gentle sweetness without any sugar. A lovely option for toddlers from around 12 months — cook until set, then cool and serve in strips.

Ingredients

  • Nectarine1 pc
  • Egg1 pc
  • Rice flour2 tbsp
  • Corn flour1 tbsp
  • Baking powder1/2 tsp
  • Butter1 tbsp

Instructions

    1. Finely chop 1/2 of the nectarine and add the remaining ingredients to it.

    2. Place thin slices of the remaining nectarine onto a frying pan, then pour the batter on top.

    3. Bake for 3-4 minutes on each side over medium heat.
