Homemade Noodle Soup

Homemade noodle soup pairs tender hand-cut noodles with meat, potato, onion and carrot for a hearty, balanced bowl of protein, complex carbohydrates and vegetables. It's a comforting meal for babies from around 8 months. Simmer until everything is soft, cut the noodles short, and serve warm.
Ingredients

- Whole wheat flour100 g
- Egg (size C0)1 pc
- For the soup:N/A
- Any meat150 g
- Potato1 medium
- Onion1/4 of an onion
- Carrot30 g
- Ghee (or regular butter, added at the end)1 tsp
- Water1 l
- Parsley or spinach10 g

Preparing the noodles: Mix flour with the egg and knead into a firm dough, adding 1 tbsp vegetable oil. Let it rest for 10 minutes.

After the dough has rested, roll it out thinly (2-3 mm thick). Cut into strips, sprinkle with flour, and let dry for 3-5 minutes. Cut into thin noodles.

In a thick-bottomed pot, melt ghee (if using butter, add it at the end), add meat, onion, and carrot; sauté until golden, then pour in the water.

Peel and cube the potatoes, add to the pot, and cook for 15 minutes.

Add the noodles (I used 80g and froze the rest) and cook for another 8 minutes. Add finely chopped herbs at the end.

For children over one year old, add salt to taste.

If cooking for the family, multiply the ingredients by the number of family members.
