Strawberry Ricottaniki

Ricotta, Egg, Strawberry, Rice flour, Baking powder

Strawberry ricottaniki are soft ricotta pancakes studded with sweet strawberry and bound with rice flour — protein-rich, lightly sweet and tender. They're a lovely breakfast or snack for toddlers from around 12 months. Pan-cook gently until set, then cool and cut into strips for self-feeding.

Ingredients

  • Ricotta180 g
  • Egg1 pc
  • Strawberry4-5 pcs
  • Rice flour35 g
  • Baking powder1/2 tsp

Instructions

    1. Finely chop the strawberries.

    2. Mix all ingredients in a deep bowl. You can optionally add sweetener to taste.

    3. Form small balls and bake on parchment paper: in an air fryer for 10 minutes at 180°C, or in an oven for 20 minutes at 180°C.
