This vitamin-packed pancake wraps a creamy ricotta-and-berry filling in a vibrant spinach pancake for a healthy, colourful bite rich in vitamins and protein. It's a fun way to serve greens and fruit to babies from around 8 months. Cook the pancake gently, fill, then cool and slice into pieces.

Ingredients

  • For the pancakes:-
  • Spinach30 g
  • Egg (C1)1 pc
  • Any flour40 g
  • Water50 ml
  • For the filling:-
  • Ricotta70 g
  • Any berries120 g

Instructions

    Place the spinach, egg, flour, and water in a blender. Blend well.

    Preheat a frying pan and pour in half of the mixture. Reduce the heat and bake the pancake for 2-3 minutes on each side.

    For the filling, take any berries, mash them with a fork, and mix with the ricotta.

    Spread the mixture onto the finished pancakes, fold them in half, and cut into kid-friendly portions.
