Vitamin Pancake

Egg, Oil, Broccoli, Cauliflower, Garlic, Rice flour, Sour cream

This vitamin pancake folds broccoli and cauliflower into an egg-and-rice-flour batter with a little sour cream for a soft, green-packed bite full of fibre and protein. It's a clever way to serve vegetables to babies from around 8 months. Pan-cook gently until set, then cool and serve in strips.

Ingredients

  • Broccoli40 g
  • Cauliflower40 g
  • Garlic1 clove
  • Egg1 pc
  • Rice flour1 tbsp (level)
  • Sour cream (can be replaced with plain baby curd)1 tbsp
  • Oil1 tsp

Instructions

    Mix the egg with rice flour and oil, whisk well, and cook the pancake.

    Steam the broccoli, cauliflower, and garlic clove for 10 minutes. Mash with a fork and add a spoonful of sour cream or curd.

    Fill the pancake with the mixture and roll it up. Cut into pieces and serve to the baby. For children over one year old, the pancake and mixture can be lightly salted.
